Observation (CORRECTED DURING INSPECTION): The concentration of QUATS sanitizing solution inside sanitizer bucket is 50ppm. A sufficient concentration of QUATS sanitizing solution is important in order to remove pathogens present on wiping cloths and food contact surfaces.
Corrective Action(s): Ensure the concentration of QUATS sanitizing solution inside sanitizer bucket is 200ppm at all times. The operator has corrected this violation.

Observation (CORRECTED DURING INSPECTION): Cardboard boxes containing food were placed on the floor inside the walk in cooler at the time of inspection.

Note:
1) Increase the frequency of monitoring and recording temperatures of coolers. Begin monitoring and recording temperatures of hot holding units
2) A rancid smell is coming from the grease trap. Operator is aware of the issue before hand and scheduled maintenance to come in next week.
