Inspection of new Terraces Building - Serveries on floors 2 - 8 (7 servery kitchens).
Note: Director advises that fresh quats sanitizer solution is to be dispensed before each meal into a bucket and brought to each floor. Wiping cloths (with a "microban" sanitizer within the cloth) are stored in the sanitizing solution. During inspection, some buckets were empty as inspection occurred between meals. Quats is dispensed from main kitchen automatic dispenser at 200ppm (checked using your test strips).
Note: Spray bottles contained from 0 - 400ppm quats solution. Director advises that these are not to be used as per company policy and will be removed.
On all floors:
- Hand washing sinks had warm water, liquid soap, and paper towels.
- Coolers (main fridge compartment) had air temperatures below 4 C/ 40 F with the exception of 2 where the air temperature was at 5 C but the food temperature was at 4 C - ok.
- Coolers (upper compartment) had air temperatures from 3 - 7 C but the upper compartments were being used only to store lower risk (non-potentially hazardous) foods such as pasteurized juices and bread - ok.
- Dishwashers all had warm water wash cycles and final hot water sanitizing rinses (180+F at the gauge and 160+F measured inside of the machines).
- Temperature records are being kept for coolers, dishwasher, and freezers. Recommend you keep records for hot foods as well.
Note: Remove metal cans (used for liquid food waste) as these can rust and are difficult to clean.
Note: Floor 3 has packaged cookies and unwrapped coffee filters under the prep sink. Store these items in another cupboard and not under sinks/pipes. No water leaks noted today.
