Observation (CORRECTED DURING INSPECTION): Whipping cream stored in walk-in cooler that had been turned off was measured to be at 10C. Kitchen volunteers stated this walk-in cooler was turned off last night to defrost, and had been turned on this morning. This walk-in cooler was mostly storing vegetables.
Corrective Action(s): Whipping cream was moved to the other walk-in cooler which was properly working at time of inspection. All cold potentially hazardous foods must be stored at 4C or colder. Walk-in cooler was measured to be at 10C at the start of the inspection, and had reached 4C by the end of the inspection.

Comments

- Hand washing sink was unobstructed and properly supplied with hot and cold running water, liquid soap, and paper towels - good.
- Bleach sanitizer solution availble in spray bottle at 200 ppm chlorine.
- High-temperature dishwasher reached 71C at the plate surface during rinse cycle - good.
- One walk-in cooler measured at 0C, the second walk-in cooler reached 4C by the end of the inspection.
- Food was hot-held at 60C in small portions - good.
- Chickpea yogurt held at service line was measured to 3C, also held in a small portion - good.
- Dry storage of food items satisfactory. Dry ingredients were stored in bins with lids.
- All food stored off the floor - good.
- Equipment maintained in sanitary conditions.
- No signs of pest activity noted at time of inspection.
- Volunteers who were cooking and preparing food did not have very long beards. Reminder that long beards should be prevented from contacting food/falling into food.
