Observation: 1) There was build up of grease and dirt on the can opener.
2) Significant build up of grease and dirt on multiple wire racks.
3) Build up of mildew around the cover of the ice machine and inside the ice machine (ie. on the white plastic cover).
Corrective Action(s): 1) Clean and properly sanitize the can opener.
2) Clean the wire racks and remove the dirt and grease.
3) Clean both inside and outside cover of the ice machine. Properly sanitize using Quat or chlorine solution.

Observation (CORRECTED DURING INSPECTION): Paper towels were missing inside the dispenser of the main handwashing station (center of kitchen).
Corrective Action(s): Provide paper towels inside the dispenser. All handwashing stations must be stocked with cold/hot running water, soap, and paper towels. There was paper towels underneath the prep table.

Observation: There was pooling of water near the dishwasher.
Corrective Action(s): Ensure the floors are maintained and kept dry.

Comments

- General sanitation is good.
- All other handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers (walk in, prep, upright) < or = to 4C.
- All freezers (walk in) < or = to -18C.
- Most food items are stored in plastic insert containers with lids.
- Hot holding units not in use. All hot holding units must maintain temperature > or = 60C.
- High temperature conveyer dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Surface sanitizer available in spray bottles at 200 ppm QUAT solution. Ensure to provide surface sanitizer at each station (ie. main kitchen, serving area, bar) at all times to clean and sanitize any food contact surfaces.
- Dry storage area is satisfactory. Dry food items stored in carts with proper lids.
- Food items are covered with proper lids.
- No signs of pest activity.
- FOODSAFE certified staff.

- The leaking handwashing station has been repaired.
