304 - Premises not free of pests [s. 26(a)] Observation: - Mice droppings seen throughout. - 1 dead mouse observed in the tincat trap placed by the wall leading to the back fire door. Corrective Action(s): - Replace the sticky trap in the tincat trap. - Ensure regular cleaning is done to remove mice droppings and sanitize affected surfaces. Date to be corrected by: Immediately Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: - Some stains observed in the ice machine. - Mice droppings observed in the following areas: inside wooden cabinets at the coffee bar - especially in the cabinet storing syrups, inside wooden cabinets of the customer self serving station, corners & hard to reach areas in the back kitchen, storing shelves at baking station, floor underneath electrical panel. Corrective Action(s): - Ensure ice machine gets cleaned & sanitized after turning off and emptying all ice out. - Ensure to do a deep cleaning of whole storage spaces and floors by pulling out all items from cabinets & shelves. All handsinks are fully equipped. QUAT sanitizer in spray bottles measured at 200ppm with test strips. Low temperature dishwasher reached 60C and measured at 50ppm chlorine with test strips. All coolers at 4C or below. Freezer at -18C. Ensure all corrections are made regarding violations noted above. Store manager to email the undersigned with the most recent report from the contract pest control company. Report reviewed with the manger on duty.
