Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. Front hand sink - was plugged in. This is a hand sink only - there is no reason to plug hand sink in. Garbage bin with lid does not open with foot pedal.
2. Hand sink near the pizza prep table has a leak.
3. Back hand sink not equipped with soap or paper towel.
Correction: Ensure all hand sinks are equipped with hot/cold running water, liquid soap and single use towels.
Repair leak.
Replace garbage bin.
Correct immediately.

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Pizza prep cooler bottom section air temperature at 6.6 C and potentially hazardous foods ranging from 6-7 C. Top section foods are ranging between 6-8 C.
Correction: Repair/adjust cooler so that the ambient air temperature is 4 C or below.
Potentially hazardous foods must not be stored in at more than 4 C for more than 2 hours.
Use walk-in cooler for extra products.
Keep inserts lids shut.
Correct immediately.
*Staff adjusted the temperature setting at the time of inspection, check again in 1 hour and then check every 2 hours.
Comments

Follow-up inspection to report PKUR-CMSTUZ

Hot holding unit turned on and pizza slices are hot held at 60 C or above. Cook time and discard time log available - good.
Prep cooler has been adjusted and now registering at 4 C or below. Temp logs are maintained. (Violation 205 corrected).
Hand sinks have been repaired, fully stocked and have garbage bins near them. (Violation 401 corrected).
Surface sanitizer spray bottles registered at 200 ppm for quats (ensure all bottles have the correct label - two bottles in the back are labelled as 'degreaser and cleaner').
Operator described how dishes are manually washed and sanitized.
Staff are in the process of obtaining FOODSAFE Level 1 or equivalent.
Cleaning has been carried out behind equipment.

Operator indicated a 'Too Good To Go' program may be implemented - please ensure a food safety plan is submitted to the Environmental Health Officer prior to starting this program. Consult head office location to see if a province-wide Food Safety Plan has been submitted for Pizza Pizza.
