General Comments:
Danby fridge temperature was 2 degC; top freezer temperature was -20 degC
Chest freezer temperature was -22 degC
Hand sink was fully equipped
Bleach sanitizer was available on-site. REFRESH SOLUTION EACH DAY AND MORE OFTEN AS NEEDED.
Discussed 2-compartment method of dishwashing.
Concession runs from April till September.
Discussed burger prep procedures. Ensure that a smaller probe thermometer is on-site for monitoring burger temperatures. An electric bbq grill is used for cooking the burgers. Menu includes hamburger, double burger and hot dogs, ckn strips, fries, onion rings (latter 3 are fried in a self-contained fryer unit on order); prepackaged chips, candies, ice-cream, freezies, prepackaged drinks, keurig hot chocolate/coffee/tea.
Permit's restricted to single use utensils only

RECORD COOLER/FREEZER TEMPERATURES ON A LOGSHEET DURING GAME DAYS. ENSURE AT LEAST ONE STAFF ON SHIFT HAS FS LEVEL 1 CERTIFICATION.
