Observation (CORRECTED DURING INSPECTION): Meat slicer has food debris and has not been used since last night
Corrective Action(s): Clean and sanitize the meat slicer after each use or at a minimum of every 4 hours. No left over food debris should be seen

Observation (CORRECTED DURING INSPECTION): Open can of ketchup stored in fridge
NOTE: this was also cited in the February 8, 2018 inspection -continued contravention will require ticketing ($345 per infraction)
Corrective Action(s): Once a food can is open empty out the contents otherwise the rust will contaminate the foods
