Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Low temperature mechanical dishwasher did not leave bleach residual after cleaning cycle.
2. Bleach sanitizer in kitchen/back area not available at time of inspection
**Corrected during inspection** Bottle mixed upon request; measured 200ppm
Correction: 1. Contact technician to have unit serviced or recalibrated. Owner stated technician will be in tomorrow to look into other issue. There should be chlorine residual of 100-200ppm at plate surface.
In meantime, use 2 compartment handwashing method. One compartment is for washing and rinsing. Second compartment must be used for sanitizer solution (1/2 tsp unscented bleach / L water). All equipment must be washed, sanitized, and air dried.

Follow-up inspection conducted in response to Report #TCHN-CB7V9X

Mechanical dishwasher has been fixed; unit measured 100ppm Chlorine residual at plate surface
Chlorine test strips are now available for operator
2 compartment sink faucet has been fixed. Faucet no longer leaks when running water
Paper towel dispenser has been installed at all handwashing stations
Ice build up has been removed from walk-in freezer

Bar undercounter cooler has been turned on; measured 13°C. Do not keep any potentially hazardous foods (e.g. sauces with labels stating "Keep refrigerated" or equivalent, cut fruit, etc.)
Storing drinks only by end of inspection. Please ensure drinks kept in unit do not need to be kept at refrigeration temperatures.

Discussed with Operator the necessary documents to complete an ownership change.
