A routine inspection was completed:
- Coolers 4C or colder; freezers -16C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in cloth buckets, spray bottles, and in 3-comp sink had 200ppm strength. Good.
- A low temperature dishwasher has been installed. The [Cl2] during the rinse cycle was 50ppm. Test strips present. Smaller 3-comp sinks have been installed to accommodate the dishwasher. A small, separate hot water tank was installed for the new dishwasher. The new installation of the low temperature dishwasher is health approved.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- FoodSafe certified staff present.
- All surfaces, equipment, and food storage containers are in good working order.
- All in order. |
