Observation: Under the counter freezer by the deep fryer ambient air temperature -3 to 2 degrees C.
Corrective Action(s): Ensure all frozen potentially hazardous foods are stored at or below -18 degrees C. Frozen food products stored in this unit are used frequently. Bulk of frozen food products stored in the walk in freezer which is at -17 degrees C. Service the under the counter freezer. Correct by April 18, 2018.

Front area and main food preparation area hand sinks provided with liquid soap and paper towels.
Dishwasher registers 50ppm chlorine during the final rinse cycle.
200ppm quats dispensed at 3 compartment sink. 200ppm quats available for use in labeled spray bottle.
100ppm chlorine available for use with wiping cloths stored in solution when not in use. Used towels discarded into soiled container.
Shake machine being cleaned and sanitized with 100ppm chlorine sanitizer.
2 door cooler at 4 degrees C.
Freezer used to stored frozen meat patties at -17 degrees C.
Preparation area under the counter cooler at or below 4 degrees C.
Time card/stamp system in place with discard times.
