Sandwich prep cooler repaired and bottom side now cold holding at <4c. Accumulated grease on the wall surface behind the grill has been substantially removed. ****Once exhaust canopy has been serviced, verify that grease is being captured in the grease containers on either end of the exhaust canopy. If not, the canopy itself may require servicing to prevent grease from dripping down and accumulating along the wall surface behind the grill which can become a potential fire hazard.
