Observation (CORRECTED DURING INSPECTION): 1) chicken & spinach wrap sitting out on counter at room temperature. Internal temperature @ 18 deg. C. Chicken wrap was prepared one hour ago. Chicken cooked two hours ago as per operator.
2) Lasagna dishs in Front display cooler - internal temperature @ 9.8 deg. C - 10.1 deg. C. Operator cannot provide documentation of when lasagna was placed in cooler.
Corrective Action(s): 1) Chicken & spinach wrap was moved to working sandwich cooler. Do not store potentially hazardous food (PHF) at room temperature. Keep PHF (e.g. chicken wrap) at <=4 deg. C or >=60 deg. C. Chicken wrap to be discarded in two hours.
2) lasagna dishs were discarded. See comment above regarding storing of PHF's. Other items in front display cooler were <=4 deg. C.

Corrective Action(s): ensure handwashing sinks is free from obstructions at all times. The handwashing sink is sole;y used for the purpose of handwashing.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Hi temp dishwasher was removed from facility for repairs.
Corrective Action(s): -repair/replace dishwasher with commercial dishwasher. Three compartment sink was in use during time of inspection. This is only suitable for a temporary basis. should the dishwasher is not repaired/replaced, operator need to demonstrate ability to use three compartment sink. May require limiting food items/using disposable utensils and limiting seats.

-general sanitation is satisfactory
-no evidence of pest activity noted during inspection
-handwash sink contain adequate supply of hot/cold water, soap & paper towels
*Food handler was using grilling equipment, permit restrict grease vapours. Discontinue this practice.
-staff on site demonstrated correct manual ware washing
-sanitizer concentrate at three compartment sink - 100 ppm chlorine
-operator is FOODSAFE certified
-all coolers <=4 deg. C, upright freezer @ -18 deg. C
