Code 302 noted on Routine inspection # RHEN-BHPQHA of Nov-07-2019 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Tested dishwasher at 10 - 25 ppm (wash water temp about 32 C). Observed sanitizer dispensing into water reservoir without visible obstruction. Feed tubes look clean. Discussed with operator and they unit is servicedd monthly by chemical supply company. Primed unit to feed dose directly into drain reservoir. Less than expected reaction. **Chemical not performing properly? Correction: If rinse water temperature can maintain 50 C or more than 25 ppm is acceptable on interim measure. Due to limited hot water supply this is not a good long-term solution. If not, manually sanitize using sink at 100 ppm/two minute soak until problem is solved. Check with test strips as discussed using new batch of chemical and if persists contact supplier. This will be checked on follow-up date noted on report.

Comments

Discussed chlorine issue with operator. She will watch chlorine reading near end of each batch to monitor product. Chlorine is an oxidizer so will degrade once opened, but it shouldn't on typical use intervals as indicated (two weeks). Recommend date labelling batches to help monitor effective in-store shelf life. Checked residual and it measured 50 ppm. OK. Thank you.
