Observation: Glass-door dessert cooler appears to be fluctuating in temperature. Service technicians were called; operator states unit was operating at or below 4 C while being serviced. Temperature during inspection measured at 6.5 - 7 C.
Corrective Action(s): Have unit adjusted to maintain food at 4 C or colder by tomorrow (23rd February 2018). Keep all perishable foods out of this cooler until fixed and reinspected.

Comments

*Dust has been removed from corners and isolated areas mentioned in routine inspection report.
*Cracked marble countertop slab has been removed from wooden table. Table requires some refinishing - have surface restored to smooth, non-absorbent and easily-cleanable condition by next week (1st March 2018). Ensure staff continue to use cutting boards or dishes for any work on this table, until refinished.
*Note: no temperature logs have been started. Ensure these are started today. Chef states templates are available on site. Issue will be checked at subsequent inspections.
