Dishwasher at 123F and approx 100ppm. Soap dispensed into wash cycle **Recommend protective cover be place on sprinkler head in front area (Low Ceiling) **Recommend relocating drainage piping from on demand hot water to prevent water from pooling at the base of the main hot water tank. Floor drain is very close by to extend plumbing. All cold holding equipment cold holding at <4c Hot holding at >60c Equipment ie grease diffusers being maintained Floor below cooking equipment observed free of grease build up. Floor below back room sliding shelving being maintained No pest issues observed
