Observation (CORRECTED DURING INSPECTION): Vegetables were cut with a broken vegetable slicer. Slicer cannot be properly cleaned and sanitized and significant amounts of old and slimy foods were accumulating in the broken spaces.
Corrective Action(s): All foods must be prepared in a sanitary manner. All vegetables on-site cut using the vegetable cutter were discarded at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Vegetable cutter was broken and significant amounts of food debris was found accumulating in the broken pieces. Operator ordered new components for the slicer and did not replace the broken components.
2) Prep cooler door seals are still broken. Food and mould was found accumulating in the door seals.
Corrective Action(s): 1) All equipment must be in good condition and in good working order. Components of the vegetable cutter were replaced at the time of inspection.
2) Replace prep cooler door seals and ensure they are in good working order to prevent loss of cold refrigeration air and to prevent accumulation of food debris in the door seals.

Comments

-Follow-up inspection to May 4, 2018.
-Bleach sanitizer containers were properly labelled and tested at 200ppm at the time of inspection.
-New prep cooler doors will arrive this week. Follow-up inspection will be carried out to ensure repairs have been completed. Continued non-compliance will result in the issuance of an Order and or a violation ticket. Prep cooler will also require an accurate thermometer - cool unit thermometer reads 23F
