Observation (CORRECTED DURING INSPECTION): Quats sanitizer pails were less than 200ppm.
Corrective Action(s): Quats sanitizer must be maintained at 200ppm to properly sanitize food contact surfaces. When filling the sanitizer pails, ensure the solution is properly flowing through the dispenser (foamy). Quats sanitizer was tested at 200ppm and filled in the sanitizer pails at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Both prep coolers were at 4C (top and bottom).
-Shake cooler was at 4C.
-Under cooler was at 4C.
-Upright freezer (back) was at -18C.
-Chest freezer was at -20C.
-Hot holding was greater than 60C.
-Burgers were cooked to greater than 74C.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 77C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-2-compartment sink Quats sanitizer was dispensing at 200ppm.
-Slicer and dicer were generally found to be clean and sanitary.
-Blender containers sanitized every 2 to 3 orders when busy and within 2 hours when not busy.
-Dipper well was running at the time of inspection.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 equivalence valid until June 23, 2028.
