Observation (CORRECTED DURING INSPECTION): 1. Noted breakfast ham slices placed on the cold holding plate. The temperature of the ham was at 11oC
2. Noted coffee creamers in a container with ice cubes. However, ice cubes were sitting on the bottom only. and not holding coffee creamers less than 4oC effectively.
Corrective Action(s): 1. The cold holding unit is not designed properly to hold food less than 4oC. The breakfast hour is from 6:30am to 10:00am. Switch the cold holding unit to ensure food is kept less than 4oC or discard perishable foods every 2 hours.
2. Fill ice cubes upto the neck of the coffee creamer container. Replenish ice cubes when necessary.
