Observation: Observation: Ice machine in kitchen and in basement storage area observed with biofilm build-up.
Health rationale: Biofilm/mold build up on equipment can potentially contaminate ice.
Corrective action: Store all ice in containers in walk-in freezers until ice machines are in a clean and sanitary manner to reduce risk of contamination. Clean all parts with soap and water, sanitize the ice machine and allow to air dry before using the ice machine. Ensure it is cleaned more frequently to prevent build up.

Observation (CORRECTED DURING INSPECTION): Observation: Handsink at 2-compartment sink in dishwashing area not supplied with soap.
Health rationale: Soap is required at handsinks to ensure employees are able to adequately wash their hands. Without soap, employees are at risk of contaminating foods.
Corrective action: (Corrected during inspection) Handsink was supplied with soap during inspection. Ensure all hand sinks are adequately supplied with soap, paper towel, hot and cold running water to ensure employees are able to properly wash their hands.

2) Sanitation:
-Quats sanitizer (x5 spary bottles) at >200ppm QUATS
-Chemical dishwasher measured at 100ppm chlorine concentration
-Hand sinks in prep area bar and all staff washrooms adequately supplied with soap, paper towel, hot and cold running water.
-Glasswasher at bar measured at 25ppm iodine
-General sanitation - good.
-Janitorial area separate from kitchen and maintained in sanitary condition.

3) Storage:
-All food stored off the ground
-Ready-to-eat items stored away from raw items.
-All foods in dry storage and cold holding units covered and protected from contamination.
-Ensure all scoops remain outside dry storage containers.
