Meat Department - Cutting room at 8.4 C - sanitizer (quats) at 200 ppm from both double sinks. - Handwash stations stocked. - cooling units less than 4 C. - Freezers below -20 C *Make sure staff keep an eye on all chemical feed containers regularly to avoid allowing them to drain empty. **Make sure staff check behind all equipment and legs of counters for food debris. This should be daily. Overall meat section, produce section and store area well maintained and generally clean. Recommend sink stoppers themselves get cleaned on regular basis to avoid gunky build up inside. Potential point of contamination.
