Keep daily records. hot soup today is >60C Discard any food where source etc is unknown. 3 sink manual dishwashing - poster given and 100-200 ppm chlorine sanitizing rinse required. if manual dishwashing does not meet the needs of this facility, commerical dishwasher would be needed. Reviewed dishwashing policy. If adding dishwasher, submit floor plans. 1. In general, all surfaces to be non absorbent and easy to clean. Seal exposed wood/drywall by Jan 1/17 2. Clean premises thoroughly prior to opening and follow a routine, written cleaning schedule. OK to Business license pending City approval.
