Observation (CORRECTED DURING INSPECTION): Chickens cooling at room temperature, measuring 25C. Staff stated that it had been made earlier in the morning.
Corrective Action(s): Foods must be cooled from 60-20C in 2 hours or less and from 20-4C in 4 hours or less.

- chopped foods in preparation for other dishes
- carton of eggs

Staff stated some of the foods are generally used up within 2 hours of taking it out of the cooler, or were cooling. Eggs were delivered this morning.
Corrective Action(s): Discard eggs.

Observation (CORRECTED DURING INSPECTION): Rice scoop stored in stagnant water.
Corrective Action(s): Rice scoops must be stored in ice water and changed out frequently.

Observation (CORRECTED DURING INSPECTION):
1) Dishwasher did not have any measurable chlorine at final rinse cycle.
2) Sanitizer for wiping cloths did not have any measurable chlorine. Only some wiping cloths stored within.
Corrective Action(s):
1) Staff changed out sanitizer bucket; machine now dispenses 50ppm chlorine. Obtain test strips and test at least once a day.
2) New solution made at time of inspection, measuring 100ppm. Store all wiping cloths within.
