Follow up inspection conducted. Corrective actions completed:
- Utility (mop) sink is no longer being used for dishwashing. Drying rack which was on grease trap has been removed from this area. Utility (mop) sink is only used for disposal of mop water/janitorial purposes.
- All dishes are being washed in 3 compartment sink. Additional drying rack has been added adjacent to 3 compartment sink to ensure adequate space for clean dishes/utensils.
- All handwash stations are supplied with liquid soap and paper towel. Paper towel dispenser was installed at handsink at west wall of production area.
- Additional shelving units have been added to accommodate all dry goods. All foods were stored off of the floor.
- Cover has been replaced on light fixture in production area
- Additional sanitizer spray bottle has been supplied to production area. Concentration of solution measured 200ppm chlorine.
- Areas where mouse excrement was present have been cleaned and sanitized. No additional droppings were noted at the time of inspection. Pest Control Technician conducted an additional service on 11-Dec-2023. Additional traps were placed and premises was assessed for entrance points. Pest proofing has been completed on the interior where gaps were noted and additional pest proofing is planned. Continue to maintain regular pest control service and follow recommendations of pest control technician. Ensure a high level of sanitation is maintained and monitor for any further activity. If any additonal droppings are present, clean up and sanitize affected area.
