Comments

Handsinks in the kitchen, front service area, and washrooms were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler was at or below 4 degrees C (actually at 3.4 degrees C).
Other coolers were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
No hot-holding was being conducted at the time of inspection.
Previously cooled rice was stored inside small bowls in the walk-in-cooler and were at or below an internal temperature of 4 degrees C. It was reviewed that the rice must be heated to at least 74 degrees C internal temperature rapidly per order and reheated only once.
Temperature records were being maintained as "check marks" on the log sheet. Recommended: Record the actual temperature of each refrigeration unit.
No signs of recent pest activity were evident at the time of inspection.
100 ppm chlorine sanitizer was available in the spray bottles.
Dishwasher final rinse temperature was at 74.1 degrees C (71 degrees C or hotter) at the plate.
