Observation (CORRECTED DURING INSPECTION): No bleach water was available during inspection. Noted used wiping cloths on counter tops.
Corrective Action(s): Bleach water @ 100ppm Cl must be prepared and available at all time during business hours. All wiping cloths must be soaked in the bleach water when not in use. Prepare a bleach water bucket immediately.

Observation (CORRECTED DURING INSPECTION): Noted the handwashing sink was blocked with a container of cut raw chickens. The chef was cutting raw chickens on the cutting board beside the handsink during inspection.
Corrective Action(s): Do not block the handsink at any circumstances. The handsink must be always available for staffs to wash hands at all times. The chicken was removed from the handsink and put into a cooler.

2. Newspaper was in use to cover the sauce tray and the wall mounted shelf beside the deep fryer.
Corrective Action(s): Newspaper is not an acceptable material to be used in the kitchen. Replace with cleanable and durable material to cover the above areas. Replace today.
