Observation (CORRECTED DURING INSPECTION): At onset of inspection, no paper towels were present at the hand wash station.
Corrective Action(s): Single-use paper towels provided at time of inspection. All hand wash stations MUST be stocked with hot/cold running water, liquid soap, and single-use paper towels at all times.

209 - Food not protected from contamination [s. 12(a)]
Observation: Both donair machines on the left-most side of the establishment (from customer's perspective) had element covers that were significantly damaged, leading to an elevated risk of contamination into food.
Corrective Action(s): Immediately cease usage of both donair machines. Element covers for all 4 donair machines, provided from the manufacturer, MUST be replaced prior to usage of the donair machines. A follow-up inspection must occur to verify replacement of the covers prior to resuming usage. Photos taken.

Observation: Grouting around the three-compartment sink has started to peel and develop mould.
Corrective Action(s): Replace the grouting around the three-compartment sink.

Comments

Routine inspection conducted. Premise is in good sanitary condition. The following was noted at time of inspection:

1. Temperatures
- Walk-in cooler at 4C
- Prep cooler at 2C (bottom) and 4C (top)
- Products inside hot-holding units maintained at greater than 60C
- Donairs undergo a secondary cook step via grilling (internally probed at 90C), and then placed on hot-holder
- 2x chest freezers maintained at -18C or below

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water and liquid soap *see violation code regarding paper towels*
- 3-compartment sink available for washing, rinsing, sanitizing. Drain rack generally well maintained

3. Storage Practices
- Food products are stored at least 6" off the floor
- Storage practices satisfactory in walk-in cooler. Fresh fruits and vegetables stored separately from meat products

4. Pest Control
- No evidence of recent, visible pest activity was noted at time of inspection
- No rodent or pest entry points identified

5. Administrative
- Employee on-site has FoodSafe 1 certification
