Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food was stored in a sandwich display cooler that was not able to maintain at 4C or less.
As per the Manager, food was stored in this cooler overnight and some of the food was made this morning at around 8AM (more than 2 hours ago). The following food was noted in the display cooler (all food internal temperature ranging between 9.4C - 10.9C) and discarded by the Manager at the time of inspection (picture evidence collected): Italian crumble planini x 3, Italian crumble wrap x 4, booster balls x 24, egg white & cheese breakfast wrap x 3, tuna wrap x 1, egg white & chorizo breakfast wrap x 3, chipotle chicken wrap x 3, chicken panini x 10, chipotle steak wrap x 3.
Corrective Action(s): **Issue corrected at the time of inspection** Manager discarded all cold potentially hazardous food stored in this unit. Do not store any cold potentially hazardous food in this unit until it is able to maintain at 4C or below.

Observation (CORRECTED DURING INSPECTION): Cleaned utensils noted stored in a dirty container.

Dirty container was cleaned in the 3-compartment sink during the inspection.
Ensure cleaned utensils are stored in a sanitary condition by storing in a clean container at all time.

Observation: Noted 2 containers of food stored uncovered in the refrigerator of the freezer/ fridge unit in the back of house. Sliced beet and orange stored unprotected in a front of house reach-in cooler.
Corrective Action(s): All food in the refrigerator and freezer units must be stored protected in a container covered in plastic wrap/ lid to prevent potential cross-contamination.

Observation: Sandwich display cooler was noted at 9.9C at the time of inspection. As per Manager, this cooler was serviced a month ago.
Corrective Action(s): Call the technician to have the sandich display cooler serviced again. Do not store any cold potentially hazardous food in this unit until it is capable of maintaining food at 4C or below.

Observation: Thermometer in the sandwich display cooler was noted at -4C when the ambient temperature of the unit itself was measured at 9.9C.
Corrective Action(s): Replace the broken thermometer with a functioning one to allow food handlers to determine if the unit is able to maintain at or less than 4C before storing cold potentiallly hazardous food in this unit.

Routine inspection conducted today:
All handwash stations, including washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units (except for the sandwich display cooler noted in violation# 308) were noted at ≤ 4C.
All freezer units were noted at ≤ -18C.
150 ppm QUAT sanitizer detected in 2 sanitizer spray bottle, sanitizer container, sanitize basin of the 3-compartment sink and on the wall mounted dispenser.
QUAT test strips available.
Drain plugs available for the 3-compartment sink for manual warewashing. At the time, manual warewashing was taken place and proper procedures were observed.
Dipper well was turned on and functioning at the time of inspection.
Proper scoops with handles were noted in-use. Did not observe handles in contact with food.
General organization and sanitation satisfactory.
No signs of pest activities were noted during the inspection.
Manager's (available on-site at the time of inspection) FOODSAFE level 1 equivalent certificate was available and verified - expires May 3, 2027.
