Observation (CORRECTED DURING INSPECTION): - Automatic soap dispenser in packaging room was not dispensing soap
Corrective Action(s): - Once notified, staff supplied a pump dispenser with liquid soap to the room.
- Ensure liquid soap is always present for handwashing in packaging room.

Comments

- Warehouse for storage and distribution of dry goods and potentially hazardous foods. Portioning and re-packaging of dry goods such as flour mixtures occurs in packaging room where handsink is located.
- Handsink accessible and supplied with warm water (automatic faucet) and paper towel. *Liquid soap was supplied once staff were notified. See violation above.
- Bleach sanitizer solution present in packaging room for sanitizing food contact surfaces. Concentration measured 100-200ppm chlorine.
- Liquid soap and paper towel were present and 2 compartment sink in warehouse. 2 compartment sink is used for manual warewashing of scoops.
- Reviewed manual warewashing procedures. Wash, rinse, sanitize in bleach solution, air dry. Chlorine bleach present for sanitizing step.
- Walk-in cooler 2C
- Walk-in freezer -20C
- Temperature controlled room for chocolate storage 11C. Temperature is for food quality.
- Temperatures are checked twice daily and recorded. Records were up to date.
- Warehouse is organized with food items stored off of the floor on pallets or shelving.
- Pest Control contract in place with monthly service. Most recent service report viewed at time of the inspection. Perimeter of warehouse it kept clear. Measures have been taken to prevent pest entry such as filling holes with steel wool
- Procedures in place when receiving stock. Products are inspected upon receipt and rejected if there are any signs of damage or pest issues.
