Observation (CORRECTED DURING INSPECTION): Ice machine has a small amount of mould growth inside. Mould may contaminate the ice.
Corrective Action(s): Turn off the ice machine. Discard the ice. Wash the machine with soap and warm water. Rinse. Spray 100 ppm bleach solution. Dry. Turn ice machine back on.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Dishwasher was not primed with bleach sanitizer. Glassware is required to washed with detergent, rinsed, and sanitized with chlorine bleach at 50-100 ppm to reduce the number of foodborne pathogens to safe levels.
2. No bleach sanitizer on-site. Food contact surfaces (E.g. where lemons/limes cut) must be sanitized before and after food prep and at a frequency of at least every 4 hours.
Corrective Action(s): 1. Dishwasher primed during inspection. 50 ppm chlorine bleach achieved at glass level upon final rinse.
2. Bleach sanitizer mixed up at 100 ppm and wiping cloths placed inside. Operator showed how to mix.
