Prepared salads made on site in many variations and sizes. Romaine lettuce is not being washed prior to making the salads. Discussed concern with Shane (manager) regarding using unwashed lettuce (packaging states that lettuce must be washed prior to consumption) and requirement to follow food safety plan. Asked manager to contact head office regarding this concern and for head office to distribute reminder to all stores to wash lettuce prior to use. Also sent email to manager to disseminate concern to all inspectors in FHA to follow up.
