Observation: Food crumbs and stains accumulated under the shelf beside the walk-in-cooler door. This will attract pests.
Corrective Action(s): Clean these areas by moving the shelf and washing the floor and wall to remove the food debris. Ensure a weekly cleaning of the floor and walls under and behind ALL shelving units are cleaned by moving the shelving units.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The lid covering the flour storage bin was cracked and repaired with a non-food grade adhesive. Chemicals from the adhesive can leech/contaminate the flour.
Corrective Action(s): Discard the lid and food container, and purchase a new one that is made of a material that is food grade, durable, sealed, and cleanable.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -23C or colder; hot holding above 60C; and thermometers present.
- High temperature dishwasher has a rinse cycle temperature of 75.9C at the plate's surface as per max/min thermometer.
- Bleach sanitizer in cloth bucket had [Cl2] of 200ppm. **Ensure kitchen staff are storing cloths in the sanitizer bucket when not in use**
- Hand washing sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks, shelves or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy and filters cleaned every week. The next professional cleaning service is due in Feb. 15/23, call to schedule a cleaning this month.
- No signs of pests.
- Valid FoodSafe Level 1 certificate, or an equivalent course, possessed by staff.
