Observation (CORRECTED DURING INSPECTION): What was claimed to be the sanitizer bucket had soapy water. Staff had advised this soapy water was used for prep surfaces today. 200ppm chlorine solution was prepared in a bucket to hold wiping cloths and staff had washed/sanitized food prep surfaces using this solution at this time.
Corrective Action(s): Ensure to have 100-200ppm chlorine solution available for use at all times. All food prep surfaces must be sanitized using this solution before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.

Routine inspection conducted:

-Handwash stations all adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezer operating below required temperature of -18'C
-Hot-holding units operating above 60'C
-High temperature dishwasher achieved 73.6'C at the plate level after final rinse.
-General food storage practice satisfactory.
-Traps in place. No evidence of pest activity observed at this time.
-Professional pest control company contracted for regular visits.
-Washroom satisfactory.

NOTE: Foods at servery - yogurt, picked carrots, cut onions kept for less than 1-2 hours, otherwise discarded.
NOTE: Wooden blocks in walk-in cooler covered with tin foils.

General sanitation of the facility satisfactory throughout.
