Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer in a spray bottle was measured >200 ppm and resulting bleached out test paper. It was diluted down to 100 ppm at this time.

Observation: Dead cockroaches observed on sticky trap pads. No other live pests observed at this time.

Hand washing station is equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate.
High temperature dishwasher's sanitizing cycle measured at 71C at the plate level.
Coolers measured at 4C or less.
Freezers measured at -18C or less.
Hot holding measured at 60C or higher.
Foods being cooked measured at >74C.
Monthly pest control service in place.

Note:
Ice machine is not in use.
Prep table cooler in the middle of the kitchen measured at 11C. No potentially hazardous foods stored at this time. Work order is placed to service the cooler.
