Observation: Ice machine observed with a significant build up of moulds and bioslimes at the ice tray.
Corrective Action(s): Turn off discard ice. Perform a complete cleaning of the internal mechanics of unit to remove all moulds, slimes, biomats and scale to ensure ice is produced and used free from contamination. Send picture of completed work to this office.

Cooling units all less than 4 C.
Freezer below -18 C. (it's pretty full so subject to increased frosting issues).
dishwasher measured at 76 C at plate.
Sanitizer main feed (multi-quat) measured at 200 ppm.
**Make sure to get appropriate test strips. Discard the Sink and Surface strips and obtain proper quats strips.
Minimal pest activity noted. Pest Control contract in place (8 week interval).

Note:
- Clean up the area around the prep sink area as discussed.
- Clean up the flour storage area (floor and shelves).
- Make sure to keep the LIMITED counter space free and available for use as food prep/service and not as storage space. Work to organize these spaces.
