Corrective Action(s): Ensure that least one staff member on shift during the Operator's absence has valid FOODSAFE Level 1 or equivalent course training. Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Interior right hand side surface of the ice machine (above the level of ice) contained a small amount of visible debris.
Correction: Empty out the ice machine and clean and sanitize the interior surfaces in accordance with manufacturer's directions; Correct today.
Comments

Follow up inspection:
-Interior surfaces of ice machine appeared to be in a clean condition.
-Staff stated they had emptied the ice before cleaning and sanitizing the ice machine.
-Digital probe thermometer was available on-site.
-It was reviewed that macaroni and cheese and soup should be reheated to at least 74 degrees C prior to hot-holding it at 60 degrees C or hotter.
-Ice scoop was stored in a clean container separate from the ice.
-In use utensils were being stored in a clean container.
