401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Two hand sinks (front corner and next to pizza prep cooler) were lacking soap. One hand sink (front corner) was also lacking paper towels.
Corrective Action(s): REPEAT VIOLATION. As previously noted, all designated hand washing sinks must be properly supplied with liquid soap and paper towels in working dispensers at all times, along with hot and cold running water.
Employee onsite at time of inspection did not know how to refill dispensers. Hand sink next to three-compartment sink was properly stocked and available for use in the meantime.
As this is a repeated violation, note that further non-compliance may result in enforcement action(s) being taken.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Employee onsite was wearing gloves and performing different tasks without washing hands and changing gloves in between each task.
Corrective Action(s): Gloves are not a replacement for hand washing. Gloves must be changed between each task (as often as you would wash your hands), with hand washing occuring at each glove change.

Observation: Racks of bins for pizza dough stored directly under UV fly light.
Corrective Action(s): Do not store any food or food-related item under the fliy light, as dead flies can fall into/onto the food item or equipment.

Observation: Heavily soiled/dirty pail stored in mop sink.
Corrective Action(s): Deep cleaning in/around mop sink area required. Clean or discard the pail.

Observation: Employee onsite at time of inspection did not have FoodSafe level 1 (or equivalent).
Corrective Action(s): At any time during operation, there must be at least one staff member onsite who has FoodSafe level 1 or equivalent.
Have more staff register for and complete FoodSafe level 1 if needed.

Comments

- One hand sink (next to three-compartment sink) was properly supplied with hot/cold running water, liquid soap, and paper towels in dispensers. See violation code 401 above - repeated violations may result in enforcement action(s) being taken in the future.
- Three-compartment sink available for manual warewashing.
- Quats sanitizer solution available at 200 ppm from dispenser and in spray bottle. **Note that the supply for the dispenser is almost empty.
- No hot-held pizza at time of inspection.
**REMINDER that a time-tracking log must be available and in use if pizza is not held at 60C or hotter. If pizza held at pizza warmers are measured to be below 60C and no time-tracking log can be reviewed by the health inspector during an inspection, the pizza will be DISCARDED.
- Coolers measured at 4C or colder.
- Freezers measured at -18C or colder.
- Dry storage area satisfactory.
- No signs of pest activity noted at time of inspection.

*A follow-up inspection will be conducted. Ensure all violations noted above are addressed.
