Observation:
1) (CORRECTED DURING INSPECTION) Sanitizer bottle measured 0ppm quats.
2) Dishwasher reached a maximum of 66C at the final rinse cycle after three runs.
Corrective Action(s):
1) Staff refilled bottle at the time of inspection from the dispenser. Solution measured 200ppm quats. Ensure that solution is not diluted, and test with available test strips if unsure.
2) Call technician and repair so that the dishwasher is able to reach 71C at the final rinse cycle. Until it is repaired, wash your equipment in the dishwasher, and manually sanitize. To manually sanitize, fill one sink with a 100ppm solution of bleach and water (5mL of unscented household bleach in 2.5L of water); submerge equipment for 2 minutes and allow to air dry.

* Owner stated that there is a leak from one of the kitchen sinks and has already called a plumber. Plumber is expected today (May 15, 2018) to address the issue. No major water pooling in the basement area but ceiling is slightly damp.
