Observation (CORRECTED DURING INSPECTION): Knives were stored between a wall and a prep table.
Corrective Action(s): Discontinue the practice of storing knives - area between table and wall cannot be cleaned and sanitized on a regular basis. Knives were washed and sanitized in the high temperature dishwasher.

Observation (CORRECTED DURING INSPECTION): Soap dispenser for the sushi handwash station does not properly dispense soap.
Corrective Action(s): Repair liquid soap dispenser to ensure sushi chef can carry out proper handwashing. Pump dispenser of soap was placed at the handwash station at the time of inspection.

Observation: 1) Rodent poison was found throughout the facility.
2) Scoops were found stored in dry ingredient containers
3) Foods were found stored on the floor in the dry storage area.
Corrective Action(s): 1) Remove all poison from the facility. Poisons can only be applied by a professional pest control operator.

2) Discontinue the practice of storing scoops in dry ingredient containers - handle may contaminate scoops.

3) Discontinue the practice of storing foods on the floors. Foods must be stored off the floor to prevent potential contamination of foods and to facilitate proper cleaning.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were observed throughout the restaurant (kitchen, dry storage area, and dining area). Rodent burrow was also found by the from cash register made of insulation. Poison was also found throughout the facility. Photos were taken at the time of inspection.
Corrective Action(s): Facility must clean and sanitize all affected area using the following method:
-Mix 1:10 bleach and disinfect surfaces for 2 minutes
-Wipe away droppings using a paper towels
-Discard paper towels in garbage and wash hands
All poisons are to be discarded from the facility.

Observation: Rodent droppings were found throughout the facility and cooler door seals were found to have mould growth.
Corrective Action(s): All areas affected by rodent droppings are to be cleaned and sanitized. Ensure door seals and all surfaces are maintained in a clean and sanitary condition at all times.

Observation: Flooring is covered with cardboard. Cardboard was covered with food debris and rodent droppings.
Corrective Action(s): Discontinue the use of cardboard to line floors. All surfaces must be smooth, non-absorbent, and easily cleanable.

Comments

-Sushi cooler was at 4C.
-Back upright glass door cooler was at 3C.
-Undercounter cooler was at 4C (top and bottom).
-Upright freezer was at -18C.
-Hot holding of soup and rice were greater than 60C.
-Sushi rice had a pH of 4.0.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum 71C required for proper sanitizing).
-Bleach sanitizer spray bottle was tested at 200ppm and properly labelled.
-Washroom clean and sanitary.
-Public Health Act Closure Order has been issued for rodent infestation. Facility is to remain closed until all conditions have been satisfied.
