-Walk-in cooler was at 2C.
-Under counter cooler was at 4C.
-Front display coolers were at 4C.
-Both upright freezers were at -18C.
-No hot holding at the time of inspection.
-Chicken was reheated to greater than 74C on the grill at the time of inspection.
-Accurate thermometers present in cold holding units.
-High temperature dishwasher had a final rinse of 76C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizer dispenser was tested at 200ppm.
-Quats sanitizer pails were at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Good hand hygiene practices observed by students and Chef at the time of inspection.
-Slicer disassembled for cleaning and sanitizing by teaching staff at the end of the lunch period.
-Equipment found to be clean and sanitary.
-Ice machine clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Raw meats stored separately from ready-to-eat foods.
-General sanitation good at the time of inspection.
-Kitchen serviced by a professional pest control operator. No signs of pests noted at the time of inspection. Tin cat monitoring stations had some drain flies.
-Chef FoodSafe Level 1 valid. Provided temporary confirmation of successful completion of FoodSafe Level 1 on October 1, 2019.
