Observation (CORRECTED DURING INSPECTION): Built-up of food debris observed underneath preparation coolers, stainless steel worktables, ice machine in the kitchen. Built-up food debris also observed underneath the undercounter coolers in the bar area.
Corrective Action(s): Clean and sanitize the aforementioned areas. Review facility's Sanitation Plan to ensure cleaning of hard to reach area are done daily and not weekly.

Observation: 3 overhead preparation coolers near the expo line observed to be not in operational condition and is turned off. Chef informed that they put all food under ice and changed ice solution every 4 hours. Built-up of ice observed in the walk-in freezer.
Corrective Action(s): Service the 3 overhead preparation coolers to hold an air ambient temperature of 4C or lower. Food under ice is a temporary fix and not meant to handle high volume. Corrected by: December 22, 2022.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs sanitizer buckets and dispenser measured at 200ppm. 2-compartment sink available. Low-temperature dishwasher measured at 100ppm chlorine. Glass washer measured at 12.5ppm iodine.
Prep cooler near the doughmixer, stand-up coolers, walk-in cooler, under counter cooler measured at 4C or lower. Walk-in freezer, ice bin measured at -18C or lower. Hot-holding units measured at 60C or higher.
Ice machines observed to be in sanitary condition.
Ice-cream scoops are in a dipper well. Dipper well in good operations.

NOTE: Service or replace the 3 preparation coolers near the expo line by December 22, 2022 as it is not practical to put food under ice for high volume. This may result in further enforcement actions if not corrected.

Overall, facility is well organized.
