Comments

Routine inspection conducted today:
All handwash stations, including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
Proper storage hierarchy of food was observed. Food in general was stored protected.
Hot hold units for soup and rice were holding at over 60C.
In-use utensils were being held in cold/ ice water. As per operator, these utensils are changed out every 40 minutes.
Sushi rice was noted with a pH of 4.0
2 bleach spray bottles were noted with 200 PPM chlorine residual. Appropriate name labels were noted on the bottles.
High temperature dish machine was able to reach 73.7C at the plate level during the rinse cycle.
Overall sanitation and organization acceptable.
No signs of pest activities noted during the inspection.
