Corrective Action(s): Clean underneath equipment/counters/shelving units and subsequently increase the frequency of cleaning. As well, the fronts and insides of coolers (handles included) and equipment must be wiped down daily.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (In-use utensils (e.g. tongs, scoops for sauces, etc.) are washed and sanitized at the end of every day. This is not frequently enough. In-use utensils must be washed and sanitized a minimum of every 4 hours. [Date to be corrected by: immediately])

Follow-up inspection:
Handsink no longer blocked. Each handsink equipped with liquid soap and paper towel.
Policy now in-place for washing and sanitizing utensils every 4 hours. In-use utensils may be stored in ice water (</4C) in between washing and sanitizing.
