b. signage posted indicates water temperature shoudl reach 77°C.
Corrective Action(s): a. sanitizer at 3 compartment sink should be between 100-200ppm bleach. This can be achieved by mixing 0.5tsp unscented bleach / 1L water.
b. tap water generally does not reach 77°C; tap water measured 39.5°C at time of inspection; use above (a) sanitizer mixing ratio to mix proper sanitizer solution.
