Routine inspection conducted and the following were noted:
All cooler units less than or equal to 4C and equipped with thermometers.
Standup freezer units at -18C.
No hot holding noted
All sushi products are prepared on-site daily.
Quats dispenser at 200ppm and test strips were available.
All food items stored at least 6 inches off the ground and properly covered.
no pest activity noted.
Sushi making machine was noted to being cleaned. The equipment is only used once a day during in the morning. The unit is then washed, rinsed, and sanitized after use.
Hand washing station satisfactory.
