Observation: The two main prep coolers were at 12 degC. Meats that had been in the inserts for longer than 2 hours were discarded.
Corrective Action(s): Foods from the cooler that had just been prepared were relocated to another working cooler.

Observation: General cleaning required.
Corrective Action(s): Clean the food splatters/debris off the shelving/cupboards across from the prep coolers; clean out the pull out drawers; clean and organize the shelves under the cash register and along the side of the counter.

Observation: Both prep coolers were around 12 degC.
Corrective Action(s): Get them serviced/fixed. Do not store PHF's in these coolers until they are fixed. This is a repeat infraction. Staff should be monitoring temperatures regularly and taking action as required rather than just leaving foods in the coolers when the cooler cannot maintain a temperature below 4 degC.
