Observation:
Premises has NOT paid the yearly health permit fees of $250 for 2024-2025 fiscal year. The health permit decal has expired (Mar. 31/24) and the premises is operating illegally.

Comments

A routine inspection was completed:
- New sandwich assemble cooler 3C; walk-in-cooler 3C; walk-in-freezer -20C; drink cooler 4C; cream dispenser was 1C; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 72.3C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in cloth buckets and in spray bottles had strength of 200ppm. Test strips present. Cloth bucket solution is changed every 2 hours.
- Reusable stir spoons stored in ice-water bath. The ice-water bath was clear, absent of debris and ice present.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins stored separate or below RTE foods; and foods stored 6" off the floor on racks, shelves, or pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level has been maintained.
- Exhaust canopies are clean and were professionally cleaned in May 2024. Next service and cleaning due in May 2025 as per service sticker.
- No signs of pests. Professional pest company (Phantom) contracted for monthly monitoring service.
- Valid FoodSafe certified staff present, or they possess a recognized equivalent certificate.
- The insulation around the pipe, beside the donut icing station, has been covered with a durable, sealed and cleanable material (metal). The metal cover is absent of food debris and icing. Staff indicate it is easy to clean.

ACTION
Pay the yearly health permit fees of $250.00 so the premises holds a valid health permit and decal. Failure to pay the fees will result in the closure of the premises until full payment is received.
