Observation (CORRECTED DURING INSPECTION): A heavily soiled meat grinder found on site with dried on debris. The accessories to this tool were being stored on a clean storage shelf with take out containers, food ingredients, spices, etc
Corrective Action(s): After use of a machine such as a meat grinder, you must immediately wash, rinse, then sanitize it.
Note: you currently have 2 buckets for sanitizer rag storage, but no spray bottles. You'll need a 100ppm chlorine sanitizer spray bottle to sanitize "clean in place" equipment like this meat grinder.

Observation: 1) Long stirring utensils are being stored in a cavity behind the hand wash sink & beside the chest freezer. This space cannot be easily cleaned, and is not in sanitary condition to store food contact tools.
2) Dirty rag found hanging above hand sink
Corrective Action(s): 1) Find a clean place to store your cleaned and sanitized oversized utensils
2) Keep all of your rags stored in your sanitizer buckets when not in use. Never use in place of paper towels.
