Routine Inspection 2 compartment sink used for hand washing and dishwashing equipped with hot and cold running water, liquid soap and single-use towels. Tub filled with chlorine solution for manual sanitizing of dishes. Solution registered at 50-100 ppm chlorine - staff were instructed to make a solution of 100-200 ppm. Coolers at 4 C or below. Freezers at -18 C or below. Temperature logs available. Thermometer available for checking cook temperatures. Leftovers only reheated once. Hot holding of food at 60 C or above. Surface sanitizer available in bucket with cloth and registered at 200 ppm quats. **Dusting required on shelves in dry storage area. A copy of report to be emailed to Operator.
