Observation (CORRECTED DURING INSPECTION): Handles of undercounter fridge and freezer by POS systems noted to be crusted with food debris. Visible stains also observed on exterior surface.
Corrective Action(s): Directed staff to clean and sanitize surfaces at time.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Mason jar lids manually sanitized in sink beside drainboard, however due to the walk-in cooler condensate pipes draining into sink, sanitizer strength was only ~ 50 ppm quat. This presents a problem because the condensate pipes are constantly draining with varying volumes of flow.
Corrective Action(s): Directed staff to resanitize items. Extend condensate pipes to wash sink to avoid dilution of sanitizer and to maintain sanitary flow direction, i.e. drainboard should house sanitized items (1 month)

Observation (CORRECTED DURING INSPECTION): Handsink by deep fryer blocked off by keg deliveries.
Corrective Action(s): Staff relocated kegs at time. Handsink must be freely accessible at all times.

Observation: Several fruit flies observed in back preparation area. Manager advised they have routine pest control by invoices only date back to May.
Corrective Action(s): Contact your technician regarding issue; develop treatment strategy for fruit flies (1 week). Retain all service reports for future inspection.

Reviewed burger prep procedures, staff have probe thermometers readily available and check for 74 C internal temperature for each product. Sanitizer pail for in between use also provide beside grill station.
